Spiced Apple Muffins

Spiced Apple

  • 1 Large Apple, peeled and diced to ½ inch
  • 1 Tbsp. Cane sugar
  • ½ tsp. Apple pie spice


  • ¼ cup Brown sugar
  • 1 tsp. Ground cinnamon


  • ½ cup Butter, softened
  • ½ cup Cane sugar
  • 2 Eggs
  • ½ cup a2 Milk® Whole
  • 2 tsp. Vanilla extract
  • 1 ½ cup. All-purpose flour
  • 1 ¾ tsp. Baking powder


  • ¼ cup Brown sugar
  • 2 Tbsp. Butter
  • 2 ½ Tbsp. a2 Milk® Whole
  • 1 tsp. Vanilla extract
  • 1 cup Powdered sugar, sifted

  1. Preheat the oven to 350 degrees and prepare an extra-large muffin tin with oil or paper liners.
  2. To make the spiced apple, whisk together 1 Tbsp. cane sugar and the apple pie spice. Toss the diced apple in the mixture and set aside.
  3. To make the topping, whisk together ¼ cup brown sugar and the ground cinnamon. Set aside.
  4. In a large mixing bowl, beat together the butter and sugar.
  5. Add the eggs one at a time, mixing between additions.
  6. Incorporate ½ cup milk and 2 tsp. vanilla into the wet mixture.
  7. Whisk the flour and baking powder together separately before incorporating into the wet mixture.
  8. Spoon the muffin batter into the lined tin, filling each well by about 1/3. Layer with a spoonful of spiced apples and a sprinkle of topping. Repeat.
  9. Bake the muffins for 25-30 minutes, until golden and a toothpick inserted into the center comes out clean.
  10. To make the glaze, whisk together ¼ cup brown sugar, butter, milk, and 1 tsp. vanilla.
  11. Slowly incorporate the powdered sugar, whisking until smooth.
  12. Once the muffins have cooled, drizzle each one with glaze.
