Savory Pancakes with Goat Cheese and Bacon

Ingredients

  • ¾ Cup All purpose flour
  • 1 tsp. Baking powder
  • ¼ tsp. Salt
  • 3 Eggs, beaten
  • ½ Cup a2 Milk® 2% Reduced Fat
  • 4 oz. Crumbled goat cheese
  • 2 tsp. Finely chopped fresh herbs
  • 4 Slices crispy bacon, finely chopped
  • Butter for the griddle, plus more for serving
  • Chopped scallions, for garnish

Directions

  1. Heat a griddle to 325 degrees, or a skillet on the stove over medium heat.
  2. Sift together the flour, baking powder, and salt.
  3. Separately, whisk together the eggs, milk, goat cheese, and fresh herbs.
  4. Combine the wet and dry ingredients and stir to incorporate. Fold in the bacon.
  5. Add a small amount of butter to the griddle or skillet and drop 3-inch spoonfuls of batter, one inch apart. Flip when the cake has risen and the edges are bubbly.
  6. Garnish with chopped scallions and serve with butter.
