Pumpkin Spice Pancakes

  • 1 ½ cup a2 Milk® Whole
  • 1 ½ Tbsp. Lemon juice
  • 1 ½ cup All-purpose flour
  • 2 Tbsp. Cane sugar
  • 1 ½ tsp. Pumpkin pie spice
  • 1 ½ tsp. Baking powder
  • ¾ tsp. Baking soda
  • ½ tsp. Salt
  • ¾ cup Pumpkin puree
  • 2 Eggs
  • 1 tsp. Vanilla extract
  • Butter or coconut oil, for the skillet and serving
  • Chopped pecans
  • Maple syrup

  1. In a small bowl, combine the whole milk and lemon juice. Allow the mixture to stand at room temperature until thickened, about 10-15 minutes.
  2. In a mixing bowl, whisk together the flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt.
  3. Separately, whisk together the pumpkin puree, eggs, and vanilla.
  4. Incorporate the thickened milk mixture, the dry ingredients, and the remaining wet ingredients to form a fluffy batter.
  5. Melt the butter or coconut oil in a skillet over medium heat.
  6. Working in batches, pour 4-inch rounds of batter into the skillet with room in between. Once the edges are dry and the bottom is golden, flip to cook the other side.
  7. To serve, top with butter, chopped pecans, and warm maple syrup.
