In a small saucepan, bring the water and sugar to a low boil over medium boil along with the cinnamon sticks and vanilla bean paste. Once the sugar has dissolved, reduce the heat and simmer for 5-10 minutes.
Strain the syrup into a jar and refrigerate for up to 30 days.
To make the iced latte, combine the syrup, coffee and whole milk in a glass over ice. Garnish with cinnamon, as desired.
