Gluten-Free Cinnamon Roll Bites

These Gluten-Free Cinnamon Roll Bites are not only a healthier, delicious take on traditional cinnamon rolls, but they’re ready in just 5 minutes!

Wash them down with an ice cold glass of a2 Milk®, and you’ve got yourself a nutritious energy boost that will last until your next meal.

  • 1 cup Dried apricots (or dates)
  • 1 ½ cups Salted unshelled pistachios
  • 1 tsp. Vanilla extract
  • 1½ tsp. Ground cinnamon
  • ¼ tsp. Kosher salt
  • Powdered sugar (optional)



  1. In a food processor fitted with a metal blade, place the apricots. Process for 1 minute or until smooth.
  2. Add in the pistachios and pulse in 10 second intervals until a coarse consistency is achieved, usually within 30 to 40 seconds.
  3. Add in the vanilla, cinnamon and salt. Process for 15 seconds.
  4. Remove and use a tablespoon to form dough into round bites.
  5. Place on a baking sheet and refrigerate one hour.
  6. Remove and roll in powdered sugar (if desired).
  7. Store in an airtight container in the fridge for up to 1 week, or in the freezer for up to 2 months.
