Cucumber and Avocado Salad with Creamy Herbed Feta Dressing

Ingredients

  • 1 English Cucumber, diced to ½ inch
  • 2 Avocados, diced to ½ inch
  • 2 Tbsp. Fresh lemon juice

Dressing (Makes 8 Servings)

  • 4 Ounces feta cheese
  • ½ Cup Buttermilk made with a2 Milk® (see below)
  • ¼ Cup Olive oil
  • 1 Tbsp. Parsley, finely chopped
  • ½ tsp. Fresh oregano, finely chopped
  • ½ tsp. Fresh thyme, finely chopped
  • 2 tsp. Fresh lemon zest
  • 1 Tbsp. Fresh lemon juice
  • Salt and pepper, to taste

Directions

  1. In a mixing bowl, whisk together the whole milk and the cream of tartar. Allow the buttermilk mixture to thicken for 20 minutes.
  2. To make the dressing, combine all of the ingredients in a blender. Season with salt and pepper and blend until smooth.
  3. To make the salad, combine the chopped cucumber and avocados in a bowl and sprinkle the lemon juice over top.
  4. Drizzle the salad with the prepared dressing and toss to incorporate.
