- Butter, diced into cubes

- Salt, or to taste
- Place the diced butter in a double boiler over medium-low heat and stir until melted, about 2-3 minutes. Remove from the heat and cool slightly.
- Whisking, slowly pour a small stream of melted butter into the milk.
- As separation occurs, transfer the mixture to the double boiler over medium-low heat and whisk until emulsified.
- Add as a creamy base to sauces, soups, casseroles and other hot dishes.
