Chicken and Greens with Goddess Dressing

Ingredients

Salad

  • 3 Cups Mesclun mix
  • 1 Cup Micro-greens
  • 2 Rotisserie chicken quarters (legs and thighs)

Dressing

  • 1 Egg Yolk
  • 1 Tsp. Dijon mustard
  • 2 Tbsp. Fresh lemon juice
  • ¾ Cup Olive oil
  • 2 tsp. Anchovy paste
  • 1 Clove Garlic, minced
  • 1 Cup Fresh parsley leaves, finely chopped
  • 2 tsp. Fresh tarragon, finely chopped
  • 1 Cup Buttermilk made with a2 Milk® Whole (see below)
  • Kosher Salt, to taste

Buttermilk

  • 1 Cup a2 Milk® Whole
  • 2 tsp. Cream of tartar
Rotisserie Chicken and Greens with goddess dressing

Directions

  1. To make the buttermilk, whisk together the whole milk and the cream of tartar. Allow the mixture to thicken for 20 minutes.
  2. Add the egg yolk, Dijon mustard and lemon juice to a blender and pulse to combine.
  3. Blending at medium speed, slowly add the olive oil to emulsify.
  4. Add the Anchovy paste, garlic and herbs. Once the mixture is smooth, slowly add the milk.
  5. Season with kosher salt as needed. Chill for 20 minutes.
  6. Assemble the greens and the chicken quarters on a large serving platter.
  7. Drizzle the dressing overtop to serve.
