If you’re looking for another way to go green in the kitchen, why not up-cycle your leftovers? Instead of tossing vegetable scraps in the trash or begrudgingly warming up that pot roast three nights in a row, try one of these creative ways to use leftovers.
Put Together Creamy Casseroles: Diced cooked meats, potatoes and vegetables turn into a pan of tasty comfort food simply by stirring in a can of cream of chicken or cream of mushroom soup. Top the casserole with crushed crackers and bake in the oven at 350F for 30 minutes, or until bubbly on top. Pair this weeknight dinner with a green salad and your favorite dinner rolls. Try Some Homemade Soups: Keep a few cans of broth on hand to put together simple soups, quick! We love a combo of chopped baked potatoes, leftover kielbasa sausage, and sliced onions simmered in chicken broth. Or, you can turn taco leftovers into Mexican soup simply by adding a tomato soup base to the taco meat and beans. Don’t forget to top each serving bowl with a sprinkle of cheddar cheese and crushed tortilla chips.
Make a Pasta Sauce: Turn steamed, grilled or roasted veggies into a pasta topper. Simply place the vegetables in the blender with tomato sauce, then transfer them to the stove top and simmer until thick. If the veggies weren’t seasoned, use some garlic and pepper to taste. Then, layer up a lasagna or dress some spaghetti noodles for the kids. The best part? They’ll never know they’re eating veggies!
Create a New Salad: Whether you use mixed greens or leftover cooked noodles, both work great for the start of an entree-style salad. Simply load the base up with any chilled leftover meats and vegetables cut into small pieces.
