Memorial Day Weekend has come and gone but the 4th of July is almost here! Time to celebrate summer with sunglasses, backyard barbeques, and some festive desserts.

Whether you’re planning an extravagant holiday party or an understated backyard BBQ, the odds are that you’ll need some dessert. To keep things light this year, we’ve found a handful of guilt-free red, white, and blue desserts that are just as satisfying as pure buttercream frosting. Let’s dig in!

Chia Pudding

Chia Pudding

Chia puddings require just a few simple, natural ingredients:

  • Chia seeds
  • a2 Milk®
  • Natural sweetener of choice
  • Additional fruit or flavoring (optional)

Chia seeds can absorb as much as 12x their volume which creates a thick, creamy pudding-like dessert when paired with milk. Typically the ratio is 1:3 cups of chia seeds to milk. For flavored chia pudding, try one of these fruity ideas.

  • Strawberries, blueberries, and raspberries
  • Jam
  • Vanilla or almond extract
  • Coconut flakes
  • Key lime juice

Black Forest Ice

The tart taste of cherries really comes out in this Black Forest Ice recipe. Somewhere between ice cream and flavored ice, this frozen chocolate-cherry dessert is refreshing and satisfying.

This one is simple. Cut watermelon, leaving the rind on, then insert a wooden stick into the rind to create a popsicle-like dessert. Leave them plain or add salt or shredded mint leaves.

Homemade Ice Cream

While homemade ice cream may not be the healthiest thing you can serve for dessert, it takes some strong muscles and willpower to shake it up — so no guilt over here. Poke Cake

If you’re not familiar with poke cake, we suggest you give it a try this Memorial Day Weekend. To make a poke cake, bake your favorite cake (typically white or yellow) and poke small holes in the top. Then, whip up your favorite sugar-free jello mix, and while it’s still liquid, slowly pour into those holes. Refrigerate for a few hours until the jello has partially solidified and then top with a fat-free Cool Whip.
