If you’re not familiar with poke cake, we suggest you give it a try this Memorial Day Weekend. To make a poke cake, bake your favorite cake (typically white or yellow) and poke small holes in the top. Then, whip up your favorite sugar-free jello mix, and while it’s still liquid, slowly pour into those holes. Refrigerate for a few hours until the jello has partially solidified and then top with a fat-free Cool Whip.
